Zucchini Noodles with Kale Pesto
Serves 4 with a little pesto left over

4 medium sized zucchini
cherry tomatoes (optional)
2 cups of fresh basil
2 cups of baby kale
2 cloves of garlic
1/2 cup of pine nuts
1/2 cup of olive oil
1/3 cup nutritional yeast
Juice of half a lemon
salt and pepper to taste
1. Use a spiralizer to make the Zucchini noodles.
2. Combine kale, basil, garlic and pine nuts in a blender or food processor and pulse until coarsely chopped. Add nutritional yeast and lemon juice, process on low while pouring in the olive oil. Scrape down the sides and pulse until blended.
3. combine pesto with noodles, I portioned out the noodles (1 zucchini per bowl) and then added a dollop or 2 of pesto and combined each individually. But you can probably just mix it all together just as easily.
4. garnish with a few tomatoes and enjoy!
